Job Description

The Head/1st Cook position is responsible for planning and directing food preparation and cooking activities. Also estimate food requirements, and labour costs, demonstrate new equipment, prepare and cook meals and specialty foods including dishes for customers with food allergies or intolerances. Instructing other kitchen staff in preparation, garnishing and presentation of food and teaching new cooking techniques. Ensure quality of food and portion control, create new recipes, requisition food and kitchen supplies and equipment, schedule staff, and supervise cooks and kitchen staff.General

  • Provides first class customer service, kitchen and facility cleanliness
  • Valid Occupational First Aid Level 3 certificate
  • Prepare and cook complete buffet style meals or individual dishes and foods consistent with LandSea menu plan
  • Baking a wide variety of foods, snacks and desserts
  • Prepare and cook special meals for clients as instructed by Landsea
  • Coordinate and manage buffet service or plate service
  • Schedule and supervise kitchen helpers
  • Oversee kitchen operations
  • Follow FoodSafe requirements
  • Maintain inventory and records of food, supplies and equipment
  • Plan menus, determine size of food portions, estimate food requirements and costs, and monitor and order supplies
  • Training new kitchen and dining room staff
  • Prepare weekly food orders and input or process as directed by LandSea Head Office
  • Clean-up work space surfaces, appliances, buffet lines, pots, pans, dishes and all food related equipment and supplies
  • Maintain and upkeep of kitchen and dining room equipment
  • Offer quality food and presentation
Additional
  • Provide First Aid support for staff and camp occupants

  • Adhere to specific tasks; camp fire drills, HACCP
  • Uphold all policies and practices of LandSea
  • Wear proper uniforms at all times
  • Assist with preparation and disassembly for moving and relocation
Kitchen AM
  • Turn required appliances on and prepare for use. Turn on steam table and heat lamp for hot line service
  • Soup of the day is your own creation. Have the soup ready by 11:30am
  • Hot lunch should utilize leftovers. This provides the office staff, visitors and any other employees another option besides cold sandwiches. Hot lunch should be done for roughly 15 guests, unless otherwise specified by the client. The second cook can execute the hot lunch.
Kitchen PM (plan a day in advance for planning and thawing)
  • Start prep for dinner working off menu plan: three proteins (1st line meat, 2nd line meat, 3rd line entrée), two vegetables, two starch, selection of salads, breads, desserts
  • Turn on steam table and heat lamp for hot line service
  • Update daily menu to reflect all changes, keep current
  • Ensure desserts and salads are ready
  • Prepare serving utensils for hot, cold and buffet line foods
  • Prep bus bins for used plate ware, cutlery tub and scrap food bin
  • Direct / assist in dining room set-up and salad and dessert table
  • Set-up main buffet (All food ready 15 minutes before designated time)
  • Maintain buffet line cleanliness during full service buffet (wear latex gloves, hats or hair nets)
  • Inquire regarding late plates
  • Clean up dinner buffet line, dining room, dry breakfast line and lunch table, pots, pans, dishes and cutlery
  • Consolidate products, coolers, freezers, and storage where possible
  • Wrap and put away all foods, label date and cool appropriately
  • Remove garbage, waste etc.
  • Clean all surfaces with sanitizing solution sweep and mop floors and do general tidy of work space including dining room lunch station
  • Final prep or planning for next day
Physical Requirements
  • Stand, walk, stoop, kneel, or crouch for long periods of time
  • Repeat the same movements including fast, repetitive movements of fingers, hands, and wrists
  • Use muscles to lift, push, pull or carry objects up to 50 lbs
  • Reach with hands and arms
  • Use hands to handle objects and tools
Pre-employment Requirements

  • Must have valid Government issued ID for travel
