Job Description

Tonys Meats Ltd. is a federally inspected, SQF Certified, meat processing facility located in Antigonish, Nova Scotia. The company is seeking a Food Safety /Quality Control InternThe intern shall learn all tasks associated with the day to day quality and food safety activities associated with a federally inspected meat processing facility. this includes ensuring that all processes and finished product meet or exceed established standards.Location: Antigonish, Nova Scotia (candidate must be willing to reside in Antigonish or nearby Monday to Friday)Hours: Monday to Friday (5:00 am - 1:30 pm)Duties/Tasks:Perform on floor HACCP and Quality Control monitoring and verification activities which include but are not limited to:

  • Chemical titrations
  • Sanitation verification related to allergens and controlled substances (nitrite etc.)
  • Finished product sample collection and preparation
  • Assisting with Quality Control complaints and investigations
  • Brine concentration testing
  • Calibration activities
  • Assist with daily operational QC checks
  • Ensure product specifications are met
Microbiological functions
  • Environmental swabbing for ATP, indicator bacteria, protein/allergenic traces
  • Plating and counting of environmental swabs
  • Plating and counting of finished product counts for internal shelf life confirmation and testing
  • Conduct daily pre-operational inspection
  • Assist with non-conformity report generation
  • Complete paperwork as required
  • Generate finished product reports
Qualifications
  • Current student or graduate from a relevant degree or diploma program in Canada (biology, chemistry, microbiology, food science, public health)
  • Working knowledge of computers, internet e-mail (experience working in Microsoft Office - particularly Word & Excel)
  • Full keyboarding typing skills
  • Working knowledge of HACCP principles
  • Exposure to GFSI principles
  • Knowledge of Food Safety
  • Ability to work independently while meeting deadlines
  • Meticulous attention to detail
  • Strong organizational skills
  • Excellent verbal and written communication skills
  • Strong interpersonal skills and ability to work calmly under pressure
  • Ability to work quickly, efficiently and effectively and carry a heavy workload
  • Willingness to work with supervisors, managers and CFIA to meet company objectives
  • Willingness to take on duties as assigned
  • Willingness to work in a refrigerated environment
