This is your opportunity to work in a Kitchen committed to preparing and serving the finest meals.What is in it for you:Subsidized staff accommodation provided on-site for full time statusDuty meal in our newly renovated staff cafeteriaCompetitive extended benefits package including medical, vision and dental for full time permanent statusEmployee Travel ProgramComprehensive Wellness Platform (LifeWorks)Discounts on food & beverage/fitness centre/spa/golfOpportunity to develop your talent and grow within Fairmont Banff Springs and over 5,000 properties with AccorWhat you will be doing:Reporting to the Executive Sous Chef, responsibilities and essential job functions include but are not limited to the following:Consistently offer professional, friendly and proactive guest service while supporting fellow colleaguesEnsure the consistency in the preparation of all food items according to hotel recipes and standardsConduct daily shift briefings to kitchen colleagues and ensure all kitchen colleagues are aware of standards & expectationsLiaise daily with venue Managers to keep open lines of communication regarding guest feedbackMaintain and enhance the food products through creative menu development and presentationEnsuring proper and adequate levels of food are held and ordered through birchstreet procurement systemHave full knowledge of all menu items, daily features and promotionsActively interact with guests at tablesBalance operational, administrative and colleague needsEnsure proper staffing and scheduling in accordance to productivity guidelinesEnsure the cleanliness and maintenance of all work areas, utensils, and equipmentFollow kitchen policies, procedures, service standards and monitor for performanceMonitors all safety and sanitation policies when handling food and beverageAdhere to menu engineering program and create seasonal and holiday menus according to hotel guidelinesControl outlet food cost, through menu engineering, production efficiencies, and food wasteActive in planet 21 initiativesCoach and mentor sous chefs and culinary colleaguesConduct corrective disciplinary action forms and documentation as neededCompletes daily temperature log books and insures FIFO of all received goods.Adhere to and follow ALLSAFE health and safety protocols, ensure all colleagues are trained and held accountable for the set standardPlace work orders for items needing repairOther duties as assignedYour experience and skills include:Minimum 3-4 year’s Culinary Management experience in a luxury hotel or large kitchen environmentRed Seal Certificate (Journeyperson’s papers) or recognized international equivalent requiredSafe Food Handling Certification requiredProficient in Microsoft windows applications word, excel, power point, and birchstreetAbility to focus attention on guest needs, remaining calm and courteous at all timesPossess strong leadership, organization, time management, coaching & communication skillsCreative, forward thinkingStrong Skills in visual presentation of food, with a familiarity with contemporary serving styles; Attention to detail, accuracy and consistency with recipes and platingWorks well with others, demonstrates good team spirit with an open mindAble to lift, carry and pull up to 50lbs and able to constantly stand and walk throughout shiftAble to withstand exposure to kitchen equipment includes large and small ovens, stoves, steam kettles, mixers, sheeter, fryers, rational ovens, steamers, tilt skillets, fridges and freezers as well as blast freezersYour team and working environment:Fast-paced, upscale, luxury hotelClose proximity to multiple ski resorts in winter and world-renowned hiking trails in summerHospitality employees worldwide making this a great place to develop lifelong connectionsVisa Requirements: Must be legally eligible to work in Canada.
