Were seeking a Culinary Development Chef to join our team at Banff Hospitality Collective. The Culinary Operations Manager is equal parts systems guru and creative foodie. This role will assist in the development, and fostering of the long term vision to be THE leading people-centric hospitality company of Banff National Park.What You’ll DoMaintain a strong working relationship across the company and promote a collaborative and forward-thinking work environment with team morale, productivity, and efficiency/effectiveness in mind.Rotate through all BHC venues supporting Executive and Head Chefs on improving kitchen operations, food quality and systems.Research and recommend new standards and systems to ensure efficient and effective kitchen operations. This may include resolving issues with flow of the kitchen that impact the quality of food and plating.Inspect food prep and storage areas to ensure compliance with quality, sanitation and safety standards.Support the Corporate Chef Team in creating, planning and executing new culinary direction and offerings for revenue growth. This may include assisting culinary leaders in developing and updating recipes and menus that support the vision and future direction of the companyDevelop training programs and coordinate professional development. Supports training and development of Executive and Head Chefs and their teams.Support the implementation, training and maintenance of inventory controls and costing systems to maintain food and labour costs.Serve as chef for special functions as needed, experiential activities, as well marketing opportunities.Work with suppliers for local, new and trending opportunities that can enhance our product offering, and ensure budgeted costs.Completes job responsibilities and performance objectives in a timely and effective manner and in accordance with company policies and procedures.Perform other related duties, as assigned.What You’ll NeedProven ability in the following: labour tracking, food costing and use of software like Optimum Control.Demonstrated ability to lead and direct a team.Strong working knowledge of kitchen operations, principles, methods, practices, and techniquesStrong understanding of computers, including Google Drive, internet and email, including the ability to train on these items.Excellent verbal communication skills, including the ability to give directions, and communicate with suppliers.Quick at relationship building and exceptional conflict resolution, negotiation, and objection handling skills.You’re a planner and are always organized making problem-solving and decision making easy.You’re responsive and work well under pressure, crisis management doesn’t worry you.What We’re Looking ForTwo year Culinary diploma required or Red Seal Certification required.Eight years of kitchen experience, and 5 years at the management level.Food Safety Certificate.Additional leadership training considered an asset.Were a people-centric company and we would love to get to know you beyond your resume, fast track you application and do a SCREENING INTERVIEW NOW!
