Full-Time Chef - ACCs Shadow Lake LodgeLocation: Shadow Lake Lodge, Banff National ParkAre you excited about nourishing backcountry guests with incredible food, so they can enjoy their summer or winter vacation to the fullest The Chef is responsible for executing high-quality meals – infusing fresh ingredients with an imaginative menu. If you love to be outdoors and excel in small remote kitchen settings, this opportunity may be for you.This is a full-time, year-round permanent position with benefits. The daily rate of pay is based on an 11-hour day, worked as a split shift.The Alpine Club of Canada promotes alpine experiences, knowledge and culture; responsible access; and excellence in mountain skills and leadership. We bring together, and give voice to, Canada’s mountaineering community.Shadow Lake Lodge is the ACC’s only full-service backcountry accommodation. Shadow Lake Lodge, located in the backcountry of Banff National Park, is an excellent base for cross-country skiing, snowshoeing and exploration in the winter and a world-class summer hiking destination. Comfortable lodging in private cabins and hearty, healthy, gourmet meals, along with the hospitality of the ACC create a memorable experience for each and every guest.   • Plan, coordinate and review menus with support from the administration team.
  • Prepare breakfast, lunch and dinner for groups of approximately 27 people.
  • Complete food orders, inventory controls, and food rotations.
  • Manage and work closely with the prep cook.
  • Hire and schedule relief kitchen staff.
  • Oversee and supervise the regular cleaning and upkeep of the kitchen.
  • Respond to dietary needs in an active and effective manner.
  • Maintain a professional appearance and work area.
  • Willingness to assist other members of the lodge team, as needed.
  • Follow Food Safety, OHS, WHMIS best practices, and SLL COVID19 Procedures.
Key Relationships
  • Reports to the Lodge Manager regarding food quantity control and guest dietary needs/numbers.
  • Works closely with the service team to ensure smooth, quality food service for guests.
  • Reports to the SLL Operations Director for support on responsibilities such as menu planning, food budget, and guest experience.
Requirements
  • 5 years of culinary experience with varied exposure.
  • Must be in good physical shape and must travel on foot (or bike) to and from the lodge (13km).
  • Experience in backcountry menu planning, food presentation, and execution.
  • Background in luxury hospitality, fine dining and/or adventure tourism (preferred).
  • Outstanding communication skills – able to collect and act on feedback effectively and promptly.
Additional Assets
  • Diploma or certificate in a culinary program preferred or equivalent experience.
  • Personal backcountry outdoor experience and experience in the hospitality industry.
  • You possess cultural awareness and sensitivity.
Compensation commensurate with experience, including a full benefits package.This job is in a remote area of Banff National Park. Accommodation is provided on shift as well as lodging at our Canmore ACC Hostel (subject to availability and a nominal fee) off shift. Employees must find their way to and from the lodge for work shifts (bike, hike, or run!).This position is challenging and arduous; It requires time management, quick thinking, and decisive problem-solving.
