Job Description

Hastings Racecourse is looking for a dynamic Commis Chef to join our Culinary team. As a Commis Chef, you will create a wide variety of dining creations from Asian, Italian and West Coast cuisine. You will be responsible for the preparation of food items and maintaining all company standards through adherence to all safety and hygiene policies and procedures.Duties and Responsibilities of our Commis Chef include:

  • Preparing, pre-cooking and/or cooking food products as directed
  • Preparing mis en place ( quot;setting in place quot; of foods, garnishes, sauces, dishes, cutlery, etc) and other products as required for high volume production
  • Cleaning kitchen equipment after use according to health and safety policies and procedures
  • Receiving stock from Receiving Operations
  • Labeling, dating, storing and rotating in appropriate storage areas
  • Counting inventory as directed
  • Attending monthly culinary meetings
  • Liaising and communicating effectively with all appropriate operational departments
  • Developing and cultivating strong working relationships with all stakeholders (guests, ownership and employees)
  • Ensuring compliance with licensing laws, health and safety and other statutory regulations
  • Performing other duties as assigned or directed
Education and Qualification Requirements:
  • Minimum 6 months of culinary experience
  • Culinary education an asset
  • Enrollment or completion of the ITA apprentice program a plus
  • Level 1 Food Safe Certification
  • Serving It Right Certification or the ability to achieve a Serving It Right Certification
  • The ability to successfully obtain a Criminal Record Check
  • Exceptional interpersonal and communications skills
  • Ability to handle multiple tasks at one time
  • Ability to exceed internal and external customer expectations through timely, effective and service oriented communication
  • A commitment to continually increase your knowledge of our products and services in order to offer exceptional experiences to our guests
