Job Description

JOB SUMMARY: To assist the Executive Chef or designate in assigned aspects of food preparation for the a la cart Dining Room, banquets, buffets and resort events with various levels of supervision.ACOUNTABILITIES: Required to work with the Executive Chef or designate and the culinary team to prepare and present menu items while maintaining high quality standards, quantity standards and completing assigned duties and tasks.EDUCATION & EXPERIENCE:

  • Some college/CEGEP/Vocational or technical training an asset
  • Culinary Degree or culinary degree in progress or comparable experience an asset
  • Knowledge of French and Canadian Cuisine as asset
  • Safe Food Handling Certificate
  • Workplace Hazardous Materials Information System (WHMIS)
TOOLS & EQUIPMENT:
  • Must supply own tools of the trade
  • Must supply own black, non-slip work shoes
PHYSICAL REQUIREMENTS:
  • Must be able to stand for duration of shift
  • Must be able to lift heavy objects op to 50lbs
MENTAL REQUIREMENTS:
  • Must be able to prioritize quickly
  • Must be effective at listening to, understanding and clarifying information
  • Must be able to convey information promptly and correctly
  • Must be able to communicate information correctly and effectively to co-workers
  • Must be creative and innovative
  • Must be able to work in a fast paced fine dining kitchen
DUTIES & FUNCTIONS
  • Involved in daily preparation of menu items under direction of Executive Chef, Sous Chef and various levels of supervision
  • Maintain an updated mis-en-place list and prioritize duties
  • Stay current of daily and upcoming events within establishment
  • Assist with planning and food preparation and service in assigned area
  • Employ good communication skills, work within a team, problem solving skills, decision making skills, critical thinking skills and job task planning and organization
  • Apply skills learned in school and new job skills in various areas of line preparation (scratch cooking, finishing, plating and garnishing)
  • Communicate with all kitchen staff
  • Maintain quality standards including HACCP, cleanliness of kitchen and pastry department and safe food handling and storage
  • Be creative and innovative
  • Ability to work as a team member in a team environment
  • Accepting of a learning environment and participate in continuous learning
  • Maintain cleanliness and organization of working area
  • Be flexible and willing to work in various areas of the kitchen and for various functions
  • Other duties as assigned
