Job Description

Job DescriptionAs Banquets Sous Chef at Fairmont, you will be responsible for creating exceptional culinary experiences for guests attending various events, from weddings to corporate functions. Your role involves overseeing the preparation and execution of high-end banquet menus while maintaining the luxury standards and impeccable quality for which Fairmont is known. You will lead a dedicated kitchen team, ensuring seamless operations and outstanding guest satisfaction.What you will be doing:

  • Create tailored banquet menus for different events. Adapt menus based on client needs, event themes, and dietary restrictions.
  • Oversee the preparation and cooking of all banquet dishes. Ensure that food is consistently high-quality, prepared and presented in accordance with Fairmont standards.
  • Supervise kitchen staff, including sous chefs, line cooks, and prep cooks, ensuring that tasks are delegated efficiently and staff are working in a safe and organized manner.
  • Adhere to all food safety and sanitation guidelines. Ensure that the kitchen and staff follow all health regulations, including proper food handling, storage, and cleanliness.
  • Work closely with the Conference Services and Sales team to ensure that food is served according to the event timeline and client specifications.
  • Manage the scheduling of kitchen staff to ensure appropriate coverage for all banquet events. Optimize staffing levels based on event requirements, ensuring the kitchen runs smoothly and efficiently while adhering to the labor budget.
  • Conduct daily briefings to ensure all team members are aligned with event requirements and operational goals.
  • Regularly inspect kitchen equipment and tools to ensure they are in proper working condition. Coordinate repairs and maintenance as needed to prevent any disruptions during service.
