If you have strong culinary skills, we are looking for Journeyperson to join our team and undertake the responsibilities described below.Job Requirements/Qualifications:Job Description and Responsibilities:

  • Prepare and cook complete meals/individual dishes
  • Ensure all food is prepared according to the recipes and standards specified by the Chef and Chef de Parties
  • Possess a complete understanding of the menus and syllabus
  • Contribute ideas to Seasonal menu development
  • Assist in planning menu, the creation of Fresh Sheet items, and tasting menu items etc.
  • Monitor and order supplies
  • Estimate the importance of food, labour cost, food requirements and costs
  • Maintain inventory and records of food, supplies and equipment
  • Oversee kitchen operations and delegate and assign duties to Cook Assistants
  • Ensure a consistently high level of productivity
  • Ensure all food is properly stored, labeled and rotated based on Food Safe Standards
  • Ensure kitchen staff follow proper food safety sanitation requirements to maintain a clean work
area
  • Promote professional work habits and contribute to maintaining a safe and positive environment
  • Effectively train and develop kitchen staff
  • All duties will be performed in accordance with the Fairmont Empress’ commitment to luxury service standards
Employment Qualifications and Requirements:
  • Completion of secondary school
  • 1-2 years cooking experience or completion of college or other program in cooking
  • Food Safety Certificate, or willingness to obtain before the employment start date
  • Physically capable of: Continuous standing for extended periods of time, frequent lifting and carrying of up to 50lbs, working in hot and cold station environments
Your Skills Include:
  • Fluent English language and communication skills
  • Strong artistic skills in food presentation
  • Be capable of taking direction
