Salary: $29.13 CAD gross per hour Position Summary:The Sous Chef is responsible for all Culinary and Food Safety Standards, role modeling the values and culture of the organization as well as supporting their team through training and coaching. Provides culinary expertise and leadership; promotes quality food services and ensures food safety and sanitation requirements are followed. Essential Duties and Responsibilities:
  • Responsible for ensuring food specifications and food quality standards meet all Company and customer requirements.
  • Responsible for timely, proper, and efficient preparation of all food items according to the correct menu specifications, recipes and passenger load requirements
  • Co-ordinate with Food Assembly Team Leads/Staff and ensuring the timely supply of food on a consistent basis so that flights assembly is not delayed due to food shortages.
  • Supervise department for quality and quantity; ensures items are produced and dated according to specification, and coding system is adhered to correctly (i.e HAACP and other governmental regulations)
  • Provide support and on the job training for new hires to successfully perform their jobs.
  • Ensure ingredient ordering and receiving processes are accurate, including maintaining the correct inventory of food, supplies and products.
  • Co-ordinate with Production Admin for daily production plan and report any errors to ensure accuracy.
  • Ensure safety procedures are adhered to; maintain cleanliness through shift to ensure quality product.
  • Supervise the washing of small equipment for production and ensure equipment is stored according to SOP.
  • Identify and act on opportunities to better efficiencies and cost savings.
  • Conduct quality checks on food prepared
  • Conduct yield and batch checks on raw material as needed
  • Provide feedback to associates on daily performance
Job Specific Requirements:
  • Minimum 1-3 years as a Junior Sous Chef and/or Sous Chef
  • Minimum 2-5 years as a cook
  • Previous supervisory experience working in a high volume, manufacturing, food production, restaurant or catering environment
  • In-flight catering experience or experience in a high-volume food service environment an asset
Our Employees Must Be Able to:
  • Schedule may include various shifts, weekends and holidays
  • Pass a criminal background check
Education Requirements
  • Culinary degree or cooking certification preferred
  • Red Seal or equivalent preferred
