Job Description

Trico LivingWell:Trico LivingWell is a new older adult living community opening in Summer 2022 in Kingsland, Calgary. It is Canadas first Older Adult aging-in-place community pursuing the vigorously vetted WELL v2TM Certification from International WELL Building Institute – a premier framework and performance-based system for buildings with features that advance human health and well-being worldwide. Trico LivingWell offers a campus of care and services to independent living, assisted living, and dementia care accommodations respectful to individual rights, choices, needs, abilities and enjoyment.Job Summary:The cold kitchen chef is responsible for overseeing both the pastry and cold kitchen. This chef will demonstrate strong leadership qualities with attention to details in elevating and sustaining a competitive edge. The chef will be accountable for the quality and consistency of all pastry products produced and served, and will work closely with prep cooks and take direction from Sous chef for all savoury cold dishes served, including grab & go. This position also works closely with Executive chef on menu development and implementation of new desserts as well as F&B Administrator on budgeting and goal setting.Key Responsibilities:

  • Demonstrates hands on approach to all bakery products produced insuring quality, presentation, and consistency standards are met.
  • Create & development of standardized recipes for all menu items. Ensures that all recipes are accurate and updated as needed.
  • Consult with supervisory staff if needed to plan menu changes, dietary restrictions, alternatives or pop up specials
  • Work closely with sous chef to control labour and operating costs through assisting with budgeting, scheduling, purchasing decisions and inventory control,
  • Ensures proper levels of bakery and pastry items are prepared based on forecasted needs and their prompt delivery to designated outlets/rooms for client’s enjoyment.
  • To assist with catering, and actively participate in special occasions and theme events.
  • This position is 80% hands on working and 20% paperwork.
Qualifications:
  • Completed Graduation from a certified Culinary Arts program or equivalent of industry experience (to be determined by Executive Chef).
  • Current (within 6 months) Vulnerable Position/Sector Screening (VPS)
  • Valid food safe handling certification is required.
