Job Description

Now hiring a head chef position in downtown Calgary, is seeking a head chef for the plant-based side of the restaurant! We would love to have someone who is plant-forward, vegan focused, and passionate about plant-based dining. You would have creativity in making vegan based inspired recipes, collaborating with a team of passionate professionals, and being a leader to one of Canada’s top restaurants! You will have the ability to innovate dishes based on what is delivered daily. We truly want someone who has an avid love for all things plant-based! The Head Chef will answer directly to the sushi chef + chef de cuisine. *SALARY & BENEFITS:Salary is competitive and is reflective on experience and qualification.

  • 50K to 60k depending on qualification.
Benefits include dental, optical, massage, physiotherapy, pharmaceutical
  • Available for negotiation after passing probationary period.
RESPONSIBILITIES:
  • Setting up and stocking stations with all necessary supplies
  • Overseeing the cleanliness and hygiene of stations
  • Managing food preparation activities (e.g. butchering meat, preparing sauces, etc.)
  • Handling and preparing a wide range of raw fish and vegetables
  • Ensuring proper equipment operations/maintenance
  • Instructing Sous Chefs and cooks
  • Innovate dishes based on daily arriving (weekly specials)
  • Write weekly schedules to maintain labor
  • Food ordering from various suppliers + control food costs
  • Working various techniques- included but not limited to braising, packing, sautéing, curing, grilling, cold food prep, emulsions, charcoal cooking, steaming, pastry, and ice cream
  • Ensuring that food is consistently prepared in accordance with quality standards
  • Participating in meetings as required
  • Training and managing other kitchen personnel as required
  • Working to determine menu items
  • Performing other duties as assigned and consistent with the position
**APPLICANTS MUST POSSESS:
  • Completion of a culinary diploma is an asset
  • Adequate knowledge of Japanese cuisine, cooking styles, and recipes
  • Collaborating menu development with the chef de cuisine, sous chef, and team
  • Minimum 2-3 years of head chef experience
  • Must possess own knives
  • Must have ability to prepare a wide array of vegetables and fish
  • Must have a repertoire of Japanese techniques or willingness to learn
  • Understanding of different fish and their preparation
  • Must have a reasonable understanding of business
  • Accuracy and speed in executing assigned tasks
  • Ability to manage labor, food costs, and inventory
  • Writing weekly schedule
  • Intense focus on excellence
