Role: Head of Coffee and Coffee Roaster (Full Time, Permanent)Location: Kitchener, Ontario, CanadaMokha Bunn Specialty Coffee is looking for a Coffee Roaster who is extremely motivated, quality & sustainability oriented and passionate about the specialty coffee industry to join our family as a Head of Coffee.You will be responsible for heading up our coffee program, starting from securing exceptional specialty green coffee beans from different parts of the world (either through our existing vendors or finding new suppliers) to managing and operating the roasting process, packaging, and online orders fulfillment. The role will also include involvement in other related aspects of the coffee supply chain, such as skills training, blends development and handling our wholesale customer accounts.ABOUT YOU

• You are passionate about coffee and have deep expertise in specialty coffee

• You care about the environment and sustainability.

• You have at least 4 years of experience roasting specialty coffee

• You are bilingual who speak, read and write both Arabic and Spanish to be able to communicate with our suppliers overseas and local wholesale accounts.

• You are familiar with roasting small size coffee beans on a Loaring Coffee Roaster such as our signature Yemeni mokha coffee and such varieties.

• You have an extremely good sensory skills.

• You have a great work ethic and thrive in a fast-paced, high-pressure work environment.

• You have experience using both Cropstar roasting & inventory management Software.

• You are a great problem solver when issues arise

• You are comfortable with numbers, for keeping track of inventory, orders and for making frequent conversions between kilograms and lbs

• You are able to stand for the majority of the time while roasting coffee

• You are able to carry 35 kg of green coffee unassisted

QUALIFICATIONS

• SCA certifications such as SCA Roasting, Brewing, Sensory.. etc.

• Bonus: You are a licensed Q-Grader (CQI) and/ or You are an Authorized SCA Trainer (SCA) in Roasting

RESPONSIBILITIESManage roasting operation:

• Plan releases of single origins, special features and microlots.

• Maintain frequent communication with our suppliers/ partners at the farms in Yemen(in Arabic) and South America (in Spanish).

• Coordinate air and sea shipments when importing our coffee orders.

• Roast, cup and evaluate coffee samples, perform green bean analysis, identify defects.

• Prepare and conduct cupping sessions and find out the notes both in nose and mouth.

• Evaluate coffees on a weekly basis and maintain documentation.

• Regular daily/weekly/monthly/quarterly cleaning of all roasting and grinding equipment.

• Design signature blends and maintain year-round flavour profiles

• Manage all aspects of the roasting process: administrative tasks, manage staff, handle materials, inventory, quality assurance

Roast coffee:

• Sample roasting and production roasting working in tandem with our roasting team

• Inspect beans regularly according to specifications

• Feed product to hoppers, roast and cool beans, and unload into bins/packages

• Roast green coffee to various levels as required

Production and order fulfillment:

• Plan production to meet customer demand

• Work with our packing and fulfillment teams to ensure orders are prepared on time

Quality assurance and improvement:

• Monitor roasting process to identify needed adjustments or repairs

• Inspect for quality and accurate quantity at all times

• Identify opportunities for process improvement

• Perform quality control checks at regular intervals

• Regular cleaning and maintenance of roasting equipment
