Middle Beach Lodge is looking for a head cook to assist our kitchen manager in preparing high quality dinners for our guests. Each day we offer a pre-set menu and plated meal to our guests. Our menu varies from a three course dinner to a simple soup or pasta. The meals we offer are made from scratch, using local ingredients. The cook is expected to learn to prepare meals on their own, following recipes and food safety standards.Job Summary: To integrate the Head Cook as a strategic partner with the organizational values and culture of Middle Beach Lodge.The Head Cook is responsible for managing back of house aspects of food services. To ensure quality control of food preparation, including cleanliness and food safety to produce the highest quality product possible and maintain guest satisfaction.Responsibilities: The Head Cook will perform some or all of the following;* Conduct all cooking, prep, cleaning and subsequent staff direction in the kitchen.* Responsible for training additional cooks and consistently developing the growth of current staff.* Constructing menus with new or existing culinary creations ensuring the variety and quality of the servings with the Kitchen & Dining Room Coordinator.* Communicating all weekly menus to the Kitchen & Dining Room Coordinator.* Plan orders of equipment or ingredients according to identified shortages while working alongside the Tofino Ucluelet Culinary Guild to support local vendors and ensure high quality product is being served.* Tracking all food waste and updating standard operating procedures to eliminate as much food waste as possible.* Arrange for equipment repairs when necessary or remedy repairs when able.* Ensuring all kitchen storage areas (fridge, freezer, pantry etc.) are kept clean and organized at all times.* Assist in catering for groups and weddings which may involve reviewing and modifying menus for guest requests and preferences with the Kitchen & Dining Room Coordinator and Assistant Lodge Manager as well as arranging staffing and dinner schedules to accommodate for event catering.* Assist with monitoring costs and revenues including supplies/equipment, labour, pricing, tracking invoices, and food wastage through monthly reports.* Maintain proper employee-employer relations, offer recognition, evaluate performances and administer disciplinary actions as needed.* Ensure highest standard of customer service is being upheld by all back of house staff in the open concept kitchen.* Oversee and confirm consistent, high-quality services standards are maintained at all times.* Ensure highest standard of cleanliness and food safe are being upheld at all times and participating in monthly OHS meetings.Affordable accommodation available.
