Deep cleaning of kitchen and kitchen equipment after operating hours.
Ensure all kitchen floors, ovens, deep fat fryers, flat tops, stove tops, exhaust systems and hoods, kettles, smoker hoods, walls, fridge doors, and ceiling tiles are cleaned and meet sanitation standards.
Discard used oil in correct container as per established procedures.
Cleaning all food-service utensils, dishes, glassware, pots and pans, and kitchen food-preparation tools either by hand or using an industrial dishwasher.
Sort and stack dishware, glassware, and kitchen equipment and tools.
Sort, polish, stack and store all cleaned items in an organized and safe manner.
Ensure proper use of all PPE when using chemicals and that all chemicals are properly stored and organized.
Sweep and mop kitchen floor throughout shift and collect and remove garbage and recycling.
Maintain the sanitation of kitchen equipment and other assigned areas in accordance with the Alberta Health Code and Hotel Standards.
Ensure all breakages and chipped items are removed from circulation.
Ensure all kitchen equipment is in working order, report any items in need of repair.
Follow all hotel and departmental policies, procedures and service standards.
Maintain a clean and safe work environment for all associates.
