Royal Hotel and following Franchise standards with Tony Roma’sDevelops standard recipes and techniques for food preparation which help to ensure efficiency, consistency, quality and to minimize food costsExercises portion control for all items served, to also minimize food and supply wasteAssist the General Manager with monthly forecasting and reports and assist in the development, implementation and monitoring the budget to maximize revenues. Participate in the budgeting process – develop, implement, and manage BOH, the budget, forecast, inventory and operating cost for Mt. RoyalOrdering, inventory and stock taking along with ability for coding and remittance of all invoices through the inventory management systemOversee the inventory management system, see that all recipes are integrated within MicrosSchedules and coordinates the work of all BOH employees to assure that food preparation is economical, technically correct and within budgeted labor cost goalsStaffing, training, development, staff meetings, scheduling and payroll submissionsInteract with guests to obtain feedback on product quality and service level: review feedback from guests through Social Media and Guest Satisfaction Surveys and drive goals to increase scoresConsistently improving guest and employee satisfaction while maximizing revenuesOverseeing all BOH operations at Mt. RoyalProviding a product that differentiates ourselves from our competitorsWorking with the General Manager to constantly evaluate the success of our food and beverage program and proactively taking action to capitalize on opportunities for growth in volume or qualityMeet weekly with supervisors to confirm BOH schedules are in line with the monthly forecast; ensure daily and weekly checklists are completed; ensure accurate par levels for ordering using approved vendors; ensure proper rotation and par stocks of all foods are being handled.Provide leadership and coaching that fosters an environment of problem solving, service, teamwork accuracy and speed, improved business practices and attract and retain superior talent on our teamAssist the General Manager in development and execution of F&B promotions throughout Mt. Royal Hotel“Promise to Place” ensure sustainability and respect within the communityMaintain core standards as developed by F&B Shared ServicesAdhere to People and Culture standard operating proceduresWhat skills and experience do you need for this job:2-4 years of culinary schooling: Red Seal is an assetMinimum five years well rounded experience in all areas of the kitchen in a leadership roleEnthusiastic, energetic person who can carry out all charges in a unique environmentAn effective leader, manager, trainer, administrator and team playerExceptional communication and organizational skillsInnovative, detail oriented and quality consciousProduct and quality obsessed with excellent knowledge in menu engineering and designWorking knowledge of various computer software programs (MS Office, restaurant management software, inventory management software and POS)Excellent oral and written communication skills along with good computer knowledgeExperience in a franchise enviroment would be an assestWhat will your work environment be like:Beautiful.
